Ingredients and spices that need to be Prepare to make Hyderabadi Chicken Dum Biryani:
- 1 kg Basmati rice
- 1 1/2 kg Chicken
- 1/2 kg Yoghurt
- 2-3 tbsp Chilli Powder
- 1 tsp Turmeric powder
- 1 tbsp Garam masala
- 3-4 tbsp Ginger garlic paste
- 5 Onions sliced
- 4 sticks Cinnamon
- Cardamom pods 6
- 1 tsp Caraway seeds
- Cloves 6
- 10 Black peppercorns
- 2 tbsp Salt for marination
- 2-3 tbsp Salt for rice
- 2-3 cups Oil
- Saffron strands soaked in 2 tbsp milk
- 1 tbsp Ghee
- Coriander leaves finely chopped 1 cup
- Mint leaves chopped 1/2 cup
- 4-5 Green chillies whole or slit
- Dry food colour 1/8 tsp (orange red)
Steps to make to make Hyderabadi Chicken Dum Biryani
- Cook rice al dente with all the whole masalas, drain and keep aside. Marinate chicken with all the masalas including the reserved oil in which the onions are fried, except ghee. Do not add whole of it, add about 1 cup. Let it rest for atleast 2 hours.
