  23. 1 cup chopped tomatoes
  24. 2 cloves
  25. 1/2 tsp Pepper
  26. 1 inch cinnamon sticks
  27. 2 green Cardamom
  28. 1 black Cardamom
  29. 2 tsp shahi Jeera
  30. 1.5 tsp salt
  31. 1/4 tsp saffron
  32. 2 tsp warm milk
  33. 1/4 cup fresh cream
  34. For Raitha
  35. 2 cup thick yogurt
  36. 1 cup sliced or chopped onions
  37. 1 tsp roasted cumin powder
  38. 1 chopped green chilli
  39. 1/2 tsp salt
  40. 1 tsp finely chopped cilantro

  1. Mix the yoghurt, turmeric, mint, biryani masala, chilli powder and salt. Add the paneer slices to the well and soak for half an hour if possible.
  2. Basmati rice should be washed thoroughly and soaked for 20 to 25 minutes. Pour water into a pan and add the cloves, cinnamon, cardamom, shahi Jeera, bay leaf and pepper until well boiled. Once water comes to boil add rice and cook it 90%.

Once onions is translucent add green chilli, ginger garlic, chopped tomatoes, mix well. When the tomato is cooked well, add the soaked paneer mixture and cook for 2mins and pour 1 warm cup water.
  4. Once paneer is half cooked add badam paste and mix well. Now take a heavy bottom vessel for layering. Before layering mix the fresh creme to the paneer after removing from heat.
  5. First pour equal mixture of paneer follow by next layer of rice sprinkled with fried onions, mint and saffron mised with warm milk. Continue the layer as necessary. Close the lid tight with foil paper and place a tawa. Once tawa is hot keep the biriyani pot and cook for 15mins.
  6. Enjoy every bite of delicious and rich aromatic biriyani.. serve with raita, brinjal or mirchi ka salan.
  7. For raitha add the sliced onions in a bowl with icecubes. Take curd in a bowl and blend with all the ingredients. Before serving add the soaked onions.
  8. Note: Adding ice cubes to onions will release the pungent onion smell and keep onion crunchy for long time. Always it's good to add onion to yogurt before serving.
